THE 2000 VINTAGE AND HARVEST
The 2000 growth period presented a higher than average temperature yet the harvest benefited from the relief of well-timed rainfalls, particularly in July. Thanks as well to beautiful weather conditions in September, both the volume and the quality of the fruit were excellent.
BLEND
AYALA Blanc de Blancs is made exclusively with Grands Crus Chardonnays (rated 100% on the “échelle des crus” scale).
TASTING NOTES
Pale gold in colour with a lovely youthful glint, the mousse of AYALA’s Blanc de Blancs is superb as is it’s distinguished necklaces of bubbles. The nose is intense and expressive with notes of ripe citrus, honey, dried fruit and a very subtle touch of toast. The palate is generous and perfectly balanced despite the wine’s relative youth. The even structure of the blend ensures a very pleasant finish on the palate. Blanc de Blancs is a light and elegant cuvee which beautifully harmonizes intense character and a delicate youthful touch.
AGEING
The wine has been aged 6 years on the lees in order to develop complexity, intensity and depth.

FOOD PAIRING
Very seductive as an aperitif, the Blanc de Blancs is equally divine with coquilles Saint Jacques or a braised turbot with truffles. It even pairs well with a crunchy dessert prepared with aniseed pears. AYALA Blanc de Blancs is a wonderful delight for wine lovers.
